Instructional Content Director
Nicole holds a master’s degree in Teaching & Learning from DePaul University in Chicago. After teaching language arts in public schools for over 12 years, Nicole chose to follow her passion of baking & hospitality and enrolled in the L’Art de la Pâtisserie program at The French Pastry School. Soon after graduating, she opened Le Flour Bake Shop & Cake Studio in Chicago’s Edison Park neighborhood. There, she further developed her skills and inspired others to learn the craft. In May 2011, Nicole was inducted into Les Dames d’Escoffier, an international organization of women leaders in the food industry whose mission is education, advocacy, and philanthropy. Marrying her first love of teaching with pastry, she accepted a Pastry Chef Instructor position at The French Pastry School in 2013. She competed in the International Cake Exploration Societe (ICES) Certification Program and was awarded Certified Master Sugar Artist, the organization’s highest title worldwide in 2015. Today, Nicole serves as The Butter Book’s Instructional Content Director developing lessons and courses. She is also one of the founding members of the Les Dames d’Escoffier Greater Madison Chapter.
