Sébastien Canonne, M.O.F.
Sébastien Canonne, M.O.F., and co-founder of The Butter Book brings his impressive experience and world-renowned talents to our team.
He was born and raised in Normandy, France, and began his career with both culinary and pastry apprenticeships. His pastry apprenticeship, guided under the legendary chef Gaston Lenôtre in Paris, was a life-changing experience. After he mastered the proficiencies of pastry with Chef Lenôtre, Chef Sébastien worked in prominent establishments such as The Côte Saint Jacques hotel in Joigny, Burgundy, France; the Beau Rivage Palace in Geneva, Switzerland; the Hotel Euler in Basel, Switzerland and the Palais de L’Elysée for French President François Mitterrand in Paris, France. In 1991, he moved to the United Stated to work for the Ritz-Carlton Hotel in Chicago, Illinois.
In 1995, he co-founded, along with Chef Jacquy Pfeiffer, The French Pastry School in Chicago – one of the highest-ranking pastry schools in the world. In 2004, Chef Sébastien received the prestigious title of Meilleur Ouvrier de France (Best Craftsman of France). In 2007, he was named one of the top 40 under 40 in Crain’s Chicago Business Magazine. Throughout his career he has been bestowed with numerous medals, awards and honors celebrating his sincere dedication to the craft as a chef and true teacher. In 2015, he was named Knight by the French Government in the prestigious National Order of the Legion of Honor (Chevalier dans l’Ordre National de la Légion d’Honneur). He continues to bring his gifts and talents as a chef, educator, and distinguished figure in the pastry community and now – The Butter Book. He is the mastermind of our team, steering us in ways we never thought possible.
